Apple Pancakes – An Apple Twist on Pancakes

An apple pancake is much like a deep-fried Oreo Cookie, except the inside is filled with natural sugars, fiber, and vitamins. The recipe is as easy as that: peel, core, slice crisp apples, dip in pancake batter, and fry as you would a pancake.

Tart apples such as a Granny Smith make a good contrast to the sweet pancake batter, a drizzle of honey or maple syrup will make the flavors pop.

If you are making a lot, or the apples are cut in advance sprinkle some lemon juice on them to keep them from browning.

You can use any commercial pancake mix for the dipping, or I have included a basic scratch recipe here.

Pancake Recipe:

  • 1 cup ap flour
  • 2-3 Tbsp sugar
  • 2 tsp baking powder
  • 1 egg
  • ¼ tsp salt
  • 2/3 cup milk
  • Butter/margarine for frying

Combine all dry ingredients. Add wet ingredients, whisk until smooth. You may add more milk if the batter is too thick, but it should coat both sides of the apple uniformly.

Fry on medium heat in a pat of butter or margarine. Turn when bubbles in the batter do not close on themselves.

Best served hot. Sauce with honey or maple syrup.
